What is xanthan gum?

Starbucks uses a frappuccino base (made with xanthan gum) for all their frappuccinos. Xanthan gum is a common food additive used for stabilising and thickening drinks or food. It’s the secret ingredient Starbucks uses, and is produced from simple sugars using a fermentation process (here’s more about xanthan gum). You can make the frapuccino without, but it will have a different consistency and won’t be as smooth. Xanthan gum is available in big supermarkets such as Whole Foods, Walmart (US) or Tesco (UK). Of course, you can also buy it from Amazon. Buy it once, and it’ll help you make to make many frappuccinos at home.

Equipment

  • Blender or shaker
  • Small bowl

Materials

  • 1 cup fresh ice cubes
  • 1 cup whole milk
  • 1 tbsp matcha tea powder
  • 1/2 tsp vanilla syrup
  • 2 tbsp custard sugar
  • 1 pinch salt
  • 1 pinch xanthan gum optional
  • 30 g sweetened whipped cream optional

Instructions

  • Blend the milk, sugar and xanthan gum with a splash of room-temperature milk to dissolve.
  • In a blender, place the ice cubes, the mixture, green tea powder, vanilla syrup. Pulse a few times to break up ice. Then blend for a few seconds until smooth and creamy.
  • Pour into a glass and top with whipped cream. Sprinkle some extra green tea powder on top.

Notes

If you don’t have a blender, you can break the ice into smaller pieces and put the ingredients in the shaker, close tightly and shake for about 1 minute.
Considering the amount of sugar and calories, this recipe is pretty much like a dessert. To make this recipe healthier, use natural soya milk or almond milk, skip the sweetened whipped cream or reduce the sugar.
